Breakfast Crock Pot Casserole

I love using my crock pot.  I love waking up and breakfast is already prepared even more!  This is a great recipe to set at night and have it ready for a good start in the morning.

Ingredients:

  • 6-8 strips of bacon, or 1 pound of breakfast sausage, cooked
  • 1 garlic clove, minced
  • 1 red or green pepper, chopped and seeded
  • 2 lb. bag of frozen shredded hash browns, lightly thawed just so you can break apart
  • 1 1/2 cups of cheddar cheese
  • 12 eggs
  • 1 cup milk
  • 1 tsp. dried dill
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions:

  1. Spray crock pot generously with cooking spray.
  2. Saute garlic and bell pepper for 5 minutes or so to soften.
  3. Place 1/3 of frozen hash browns in bottom of crock pot.  Add 1/3 bacon/sausage, 1/3 of garlic pepper mixture, 1/3 of cheese.  Repeat layers ending with cheese.
  4. In bowl mix all eggs, milk, dill, salt, and pepper.  Pour slowly into crock pot.
  5. Cook on low for 8-10 hours.

Some things I will change when I make this again will be more meat, more cheese, more salt.  Other than that it was good.  The best thing is you can wake up and just eat and not have to cook breakfast!  Great for busy holiday times or gatherings.

Sausage, Egg, and Cheese Breakfast Taquitos

I am all about breakfast for dinner.  Love it.  I usually only get a good breakfast if we get out early enough on the weekend, which is very rare, so having it for breakfast lets me get that yummy food whenever I want.  Plus it is a great dinner idea for those on a budget (which we are!)  This time I decided to do a kind of What-A-Burger taquito copy cat recipe.  If I do say so myself, they tasted VERY similar to them!  Yummy.  My husband really liked it.  My daughter, well, she has given up eating all together it seems like.  She goes through phases.

Ingredients:

  • Flour tortillas
  • 8 eggs-this was for three of us.  I used a generous amount because it is dinner.
  • Half pound of breakfast sausage
  • Shredded cheese (your favorite is fine, I used Colby-jack)
  • Milk
  • Salt and pepper
  • Hash browns-for side if you wish

Directions:

  1. Cook the sausage until done.
  2. I crack the eggs into bowl first, add a little milk and salt and pepper.  Once mixed, pour over the sausage to cook.  Folding gently while it’s cooking.
  3. When the eggs start to firm a little, I start adding cheese.  I keep adding a little bit at a time until the eggs are finished.  The eggs should not look dried out.  Once they start looking a little less wet and runny, they are done.  I HATE over done scrambled eggs.
  4. Warm tortillas in microwave or however you prefer.  Put mixture in center of tortilla, top with some more cheese, and roll.  Add hash browns as your side if you chose to.

Great, easy, cheap dinner.  Plus it tasted so much like What-A-Burger!!  A+

Oats and Berries Smoothie

I am so into smoothies right now.  My three-year old says every morning, Maybe we can have a smoothie??  Ha I guess she is really into smoothies too.  The thing about smoothies is you can take them with you and they are really filling, plus they are filled with lots of good for you things.  You can throw in whatever you want and it still come out decent.

This morning I made an oats and berry smoothie.  This one is probably not the most popular because it has a kind of gritty texture because of the oats, but the oats fill you up too.

Ingredients:

  • about a cup of crushed ice-my fridge has this option, if yours doesn’t whole is fine, but I would put on bottom of blender
  • one whole frozen banana (when i first started getting into smoothies, i didn’t know that you should cut up the banana and THEN put it in the freezer.  make sure you do that.)
  • a handful of berries-i used strawberries for this one
  • about a half cup of Greek plain yogurt
  • 1/2 cup or less of non cooked oats-i just use the ones in the canister
  • cup of liquid-coconut water, plain water, milk-anything that you have that sounds good
  • honey to taste-i usually don’t use, but with the oats you need a little extra sweetness

Directions:

  1. I add the frozen banana first, then berries, yogurt, oats, honey, liquid, and crushed ice.
  2. I use the puree button on my blender.  I don’t have one of those fancy schmancy smoothie  blenders.  Just a Black and Decker and it works just fine.  You may have to open lid and move around the mixture a time or two to get it going.  This makes a lot for me.  I fill up a tall plastic straw cup (see picture).  It goes all the way to the top and is really filling.  I carry it around with me while I am doing morning cleaning things.

I would rinse out blender right away because the oats tend to stick to the side after drying and require some scrubbing to get off.  Learned that the hard way because I was so eager to try my smoothie.  If you don’t have something in the ingredients (and this goes for almost all smoothies), just substitute anything you do have.  Like I said, it is really hard to mess up a smoothie.  If you do, please let me know so we know not to do that.  haha
